In Love with Laduree

Level: Beginner & Intermediate. Suits those with basic knowledge of and experience in piping with royal icing.
If you adore macaroons, you will love these Laduree-inspired creations. Laduree is the haute couture of pastry, famed for its uber-gorgeous pastel packaging which inspired some of the cupcake designs taught in this workshop. Bring a touch of Paris to your high tea and surprise and delight your guests! In this workshop, we will be making 12 of these chic cupcakes, including the Macaroon Tower and Cameo designs. Skills covered include embossing, painting with lustre dusts and colours and making edible cameos.

High Tea

This is the perfect introduction to sculpted cakes. Teapot cakes are a popular design for kitchen teas and birthdays. Students will make one sculpted mini teapot and 6 cupcakes. You will learn how to carve a ball shape with confidence and cover the cake with ganache and rolled fondant. Particular focus will be on covering the teapot, which, like all ball shapes, can be tricky. We will also be making sugar blossoms to decorate this sweet Franz porcelain-inspired teapot. Tiffany Cupcakes

You will learn the basics of cupcake decorating and learn everything you need to make these elegant Tiffany-inspired cupcakes, including mini Tiffany box and carrier bag, bows and ribbons and sophisticated white blossoms with silver centres. Treat yourself to the ultimate cupcake decorating experience, or make these for a friend who is obsessed with all things Tiffany Blue.

Baby Gingham – Trio of Mini Cakes

Level: Intermediate. Suits those who have previously covered a cake with fondant (ie. ready to roll icing). No experience in modelling necessary.
Get loads of practice with covering cakes in fondant in this workshop, in which we will be decorating a trio of cute mini-cakes (both round and square) suitable for a baby shower, christening or child’s birthday. Covering small cakes is more challenging than large ones because they are proportionately tall in relation to their diameter. Hence it is recommended that you have some experience with fondant. You will also learn how to make the cute teddy bear and bunny figurine toppers.
Take home: 3 decorated mini-cakes

Piping Skills & Lettering

Does the thought of piping a greeting onto a cake or board make you nervous? In this course, you will learn foolproof techniques to pipe beautiful, neat greetings in a variety of lettering styles with confidence. We will be covering the basics of making royal icing and piping borders. You will be provided with templates which you can use for future cake projects.
Level: Suitable for both beginners and those with some piping experience.

Sugar Flowers for Beginners

Level: Beginner. Suitable for those with no or little experience in flower making.
Learn how to make sugar roses and gardenia. This is the perfect starting place for those new to making sugar flowers. You will learn all about the materials, tools and techniques to make sugar flowers (sized to suit cupcakes). Discover the tricks and techniques used by the prizewinning sugar artist to bring the touch of realism to your flowers which gives them the Wow factor. (Please note: the gardenia taught in this workshop is the same as that taught in the Mini Handbag workshop.)

Animal Cupcakes

We will be making cute animal cupcake toppers including puppies and an assortment of jungle animals, which would make a delightful centrepiece for a baby shower, christening or child’s birthday party. Learn how to mold five types of animal figurines and how to cover cupcakes smoothly with a perfectly domed, rolled fondant finish.

Circus Lion

This is an intensive course covering figure modelling, preparing a cake with a ganache undercoat and covering a round cake with rolled fondant icing. Learn the tricks and techniques to covering a round cake beautifully – without pleats, creases or ‘elephant skin’. Participants will have the option of applying stripes, or just focus on perfecting your smoothing and covering, the choice is yours!

Mini Designer Handbag

The only thing cuter than a handbag cake is a mini handbag cake. Learn how to sculpt, cover and decorate a designer Chanel handbag which serves 2-3 people, and make some Coco-inspired cupcakes to feed everyone else. We will also make all the intricate details which give handbag cakes the wow factor: the zipper, stitching and handles. This is a great introduction to sculpting and covering 3D cakes.

Christmas Animal Cupcakes

Make some gorgeous animal cupcakes with a Christmas theme to celebrate the festive season, including the mischievous koala dressed up as a Christmas tree. Learn how to mold animals from sugar modelling paste and decorate cupcakes with sugarpaste (rolled fondant) icing. Note: the animals taught in this workshop are different to those taught in the Animal Cupcakes workshop. If you wish to use the animal toppers for a Christmas party, remove the toppers from the cupcakes decorated in the workshop; the toppers themselves will keep.
Take home: 6 decorated cupcakes
